Nutter Butter Cookies?

Hi friends. Welcome to our Friday Pinterest Inspired Project, today we are trying out homemade nutter butter cookies. I want to thank Stacey over at The Soccer Mom Blog for this recipe!

Okay, after trying these I have a few thoughts.

  • The recipe calls for 1/2 C sugar to roll cookies in, I think you could use 1/4 C
  • It doesn’t tell you how thick to make the cookies
  • Once baked, they don’t really hold the peanut shape.

While these are good, they don’t really taste like a nutter butter. Basically it is a peanut butter cookie with a cream filling. I do find them a little rich, so I would make them much smaller next time. Please, keep in mind, I did not read her blog post, I am just going the printable recipe.

I would probably make them again, but make them into a round cookie, again much smaller. I would also underbake them a little bit, so they would be a softer cookie. I think I would also maybe double the cream filling for the cookies. The recipe calls for 1 TB of filling per cookie, I think they needed more.

Well, there are my thoughts! I would give them 8 out of 10 stars! Once hubby tastes, that will determine if I make them again. What do you think? Will you give it a try? If you do, please let me know what you think of them!
